Nothing on the shelf was both.

Everything that tasted good was dessert. Everything that was good for you tasted like a supplement. Ravena is the bar that refuses to pick.

The category was full of protein bars dressed up as chocolate. We wanted chocolate that happened to perform.

01 The problem

Functional food had a taste problem.

For years the protein category ran on an unspoken assumption: if something was good for you, it could not also be genuinely good. Bars were chalky and sweet in the wrong ways, built on compound coatings and vegetable fat engineered to imitate chocolate at a fraction of the cost.

Craft chocolate makers had the opposite problem. They had mastered flavour, but nutrition was never part of the conversation. The gap between the two was wide, and nobody was seriously trying to close it.

02 The bar

We started with chocolate, then added the protein.

Ravena is 58% single-origin Venezuelan cacao, sweetened with coconut sugar rather than refined sugar. Single origin means one region and one flavour profile — not a commodity blend that changes with the market.

Milk protein isolate is worked into the tempered chocolate itself rather than pressed into a bar that only resembles one. Ten grams of protein in a 45g bar. No PGPR, ever — that is a cheap emulsifier used to replace cocoa butter, and it has no place here.

03 How it is made

Small batches, in Arizona.

Every bar is produced with a bean-to-bar maker in Arizona, in runs small enough that someone tastes what comes off the line.

Single origin

Venezuelan cacao. One region, one flavour profile, traceable from bean to bar.

No PGPR. Ever.

Real cocoa butter, no substitutes and no shortcuts in the temper.

Coconut sugar

Sweetened with coconut sugar instead of refined cane sugar.
